The chef's knife comes in various size blades, depending on the hand size
and experience level of the user. For example, the 12 or 10" blade
is commonly chosen by men and women who are comfortable using a knife and
can control the larger blade. For those just starting to use a knife, the
8" blade is the easiest to use. When purchasing your knife, the most
commonly used and practical knife blade is the high carbon, stainless steel
blade. The high carbon holds an "edge" or stays sharp and the
stainless steel will not rust or pit with use.
